Crazy day at work but none the less had to cook right?! Felt a little cheezeee today, so what's better then a chicken enchilada casserole. This one I have to give a nod to one of my best friends Lisa. She hooked me up with this one a few years ago and while I tweaked it a little, its still one of my go-to's when the day has been hectic and ya just need a little American twist on a Mexican fav. Some sauteed chicken , onions, chopped green chilli's some Monterrey/Colby Jack cheese, sour cream and enchilada sauce...a few flour tortilla's and PRESTO...in about 45 min you have a bubbly oozing pan of goodness. This is one that really will taste even better the next day. Was very yummy! Just remember that cheese will be HOT but oh so good!!!

Monday night Shrimp E'touffe

What can you do with a bell pepper, 3 stalks of celery, an onion, some shrimp, a little butter and creole seasoning? Make a KILLER E'touffe...and once again, Kris has done just that!

I guess we should be taking photos of these cullinary delights...but not right now. We did take a photo of the meatloaf from last night. Only the future will tell if we will be posting our epicurian manifesto. LOL!

Welcome to Pea Pods Porridge!

This blog is the beginning of an idea spawned by Kristen and the movie Julie & Julia....you have to see the movie to get the idea. In any case, my wonderful wife wants this blog to be the next greatest thing on the topic of food, family and fun. Safe for all ages, we won't go on a political rant unless it has something to do with Julia Child's French Cooking book. She will divulge how to keep your hubby or significant other happy, fat, sassy or all of the above!

Take for instance today, Kris made a scrumptious meatloaf and, as a bonus, oatmeal, raisin and cranberry cookies ... a meal to die for. She will be doing most of the entries, as I am just the vehicle to get this thing going.
