Crazy day at work but none the less had to cook right?! Felt a little cheezeee today, so what's better then a chicken enchilada casserole. This one I have to give a nod to one of my best friends Lisa. She hooked me up with this one a few years ago and while I tweaked it a little, its still one of my go-to's when the day has been hectic and ya just need a little American twist on a Mexican fav. Some sauteed chicken , onions, chopped green chilli's some Monterrey/Colby Jack cheese, sour cream and enchilada sauce...a few flour tortilla's and PRESTO...in about 45 min you have a bubbly oozing pan of goodness. This is one that really will taste even better the next day. Was very yummy! Just remember that cheese will be HOT but oh so good!!!
